There’s nothing more fun than getting breakfast shaped in cute, festive and kid-friendly Halloween cut outs – even for the big kids (aka hubby). I tested this theory out on my toddler and he loved it – especially the mini witch hat cut outs. I used the base for my baked and soaked apple cinnamon oatmeal and substituted with freshly made pumpkin puree and pumpkin pie spice.
You can choose to make little faces as I did on the cut outs (I apologize for my non-artistic skills — littles don’t really care what the face looks like anyway, right?) or just keep them plain. Andrew loved to eat it cold however you can heat them up in oven for a few minutes.
Soaking the oatmeal before you eat it helps to break down the hard to digest phytic acid. This also makes it so it “sticks to your ribs” longer than oatmeal that hasn’t been soaked. I think it is especially important to soak your oatmeal if your kids are around a year and older since their bellies don’t have an enzyme to properly digest grains.
It’s best to cook it in a bigger pan so you can easily cut out the shape you want. Judge how big of a pan you need by seeing how thick your cut out is.
Soaked Pumpkin Pie Oatmeal
Extra Tools Needed:
- 1 cup organic thick rolled oats (find it here)
- 1 cup organic rye oats (find it here)
- 2 cups water
- 2 TBL raw apple cider vinegar (find it here)
- 4 pastured eggs
- 1/2 cup melted virgin coconut oil (find it here)
- 1/2 cup real maple syrup (find it here)
- 1 cup pumpkin puree (learn how to make it here)
- 2 tsp pumpkin pie spice (find it here)
- 2 tsp vanilla extract (find it here)
- 1/2 tsp unrefined sea salt (find it here)
- 1 tsp aluminum free baking powder (find it here)
- Place oats, water and apple cider vinegar in a large bowl. Mix well and cover for at least 12 hours (24 is best)
- Once the oats are done soaking, in a separate bowl add eggs, coconut oil and maple syrup and beat until all are combined
- Add in pumpkin pie spice, vanilla, sea salt and baking powder. Mix really well (you could use a hand mixer if easier)
- Stir in pumpkin puree and mix until everything is combined
- Pour into a glass baking dish
- Bake at 350 degrees for 35-45 minutes
- Once cooled, take desired cutters and “cut out” the shapes and put into individual containers
To make faces:
- Make a cocoa paste by putting a tablespoon of cocoa powder and 1/2 tablespoon water. Mix together until it forms a semi-thick paste. Use a toothpick to make faces.
To make this ahead of time:
- Follow steps 1-5 (do this the night before you plan to bake the oatmeal)
- Place a cover on glass baking dish and set in the refrigerator
- In the morning, just set the temperature and place pre-mixed oatmeal in the oven to bake!
